In my neighborhood, we have a lot of families who are gluten free which is a little hard for someone like me who loves breads and other baked goods. For our last neighborhood get together, I decided to make gluten free muffins since I wasn’t sure how many other gluten free options there would be. I had only known of one other person making a gluten free breakfast casserole so I thought it would be nice for all of the other gluten free families to have more options. I chose a gluten free blueberry muffin recipe as my family loves blueberry muffins so if it turned out good and no one ate them, we would still eat them at home.
I’ll be honest, I had never made any other gluten free item before in my life, and about a month ago, I had tried a gluten free cookie for the first time. I bought it from my favorite local grocery store and thought it would be good but it was dreadful. So the idea that I was about to make a gluten free muffin recipe horrified me because what if it turned out just as bad as the cookie? But I had agreed to take gluten free muffins so I made them anyway.
As I didn’t want another catastrophe gluten free food, I used a gluten free blueberry muffin recipe that I was hoping would be good from Bob’s Red Mill. Well, I made them, my family agreed that they looked funny coming out of the oven, but they actually tasted really good. I would make them again and can’t wait to try them with fresh blueberries during the summer!
