These key lime pie bites are perfect for parties, get togethers, and for a better handle on portion control (unless you eat all of them like I did).
I don’t normally make or post any dessert recipes because I don’t normally love them. In fact, I don’t even like key lime pie. However, I made these homemade key lime pie bites and they are fantastic!
I love that these are super quick and easy to make. I used little muffin liners to make these easily shared but unfortunately I ate almost all of them by myself right after I took photos.
- 1 1/2 cups graham cracker crumbs (finely ground)
- 1/3 cup white sugar
- 6 tablespoons melted butter
- 1/2 teaspoon ground cinnamon
- 1 1/2 cups sweetened condensed milk
- 1/4 cup sour cream
- 6 tablespoons lime juice

To make crust: combine finely ground graham cracker crumbs, white sugar, melted butter, and ground cinnamon until well mixed.

To make lime mixture: combine sweetened condensed milk, sour cream, and lime juice. Mix well.

Line small muffin cups with liners. Press about 1/2 tablespoon of crust mixture into the bottom of the liner cups.

Place lime mixture on top of the crust. Fill them as high as you would like.

Preheat oven to 350°F. Bake in preheated oven for 5-8 minutes or until tiny pinhole bubbles form and burst on the surface of the lime mixture. Do not allow it to brown.

Chill bites in the refrigerator.

Top with lime slices and/or whipped cream.
