This version of baked chicken chimichangas is baked to keep it slightly healthier but still delivers a great taste and fantastic crunch.
Chimichangas are one of my favorite foods. Me and chimis go way back and one of my favorite memories is related to chimichangas.
It was December 2007 and my friend, Mike, had volunteered to go with me to help me find a guitar. As it was the last days of the semester at college and it was a testing day (a day you could voluntarily take your final exams, although for some, exams were scheduled) and I had no plans to study and neither did Mike, I dragged him around to help run my errands after guitar shopping. After 3 or 4 hours, it was dinner time so we stopped by a Mexican restaurant on the way back to our apartment complex.
Mike ordered a burrito while I ordered a chimichanga. I paid because he told me he only had a few dollars left in his bank account to last him the rest of the month and we sat for about an hour and talked. It was the first day I realized that I actually really liked this friend of mine. He had opinions, deep thoughts, and there was no awkward conversation. It was the first time we had ever been alone and not in a group setting so all of these new facts surprised me about him. I had known him as this guy who was always late for work, never went to class, and played a lot of Guitar Hero. I just didn’t know that there was more to him.
But the main part of this story isn’t about how I fell in love with my now husband, but it’s about how he ordered a burrito, I a chimichanga, and he ended up eating 3/4 of my chimichanga! See, once he sat down and started his burrito, I asked him how it was and he said it wasn’t great so I had him try my chimichanga. He loved it and was sad he didn’t order a chimi so like the nice person I am, I let him have my chimichanga in exchange for his burrito.
And that was just the beginning. In the last 8+ years, he’s almost always found my food more appetizing and I have given up many meals to him in exchange for his not-as-good food. Luckily he eventually catches on and now he knows that if he likes my food more at a restaurant, the next time he should get what I ordered instead of eating mine.
That is one of the many reasons I love chimichangas. Such a good memory. Other reasons include the fact that they are a combination of a lot of good food, wrapped in a tortilla, and deep fried.
However, this recipe is not deep fried. We’re keeping it a little healthier here with baked chimichangas which taste just as good and are not soaked in oil. Instead, they are lightly drenched in oil.
