These buttermilk pancakes with flaxseed are absolutely delicious. They go great with your favorite syrup, butter, or just plain.
I’ve made pancakes for years so when I made these pancakes the other morning, I was shocked when they weren’t cooking right and they were so flat. Proof below:
I grew up believing I was going to be a veterinarian up until I started college and realized I couldn’t pass my exams so I gave up that route so trust me when I say that I firmly believe in never feeding your pets human food. But that morning, the pancakes were turning out so terribly that about half of them went to my begging dog. She did, on the flip side, learn how to leave the pancake sitting on her nose until we told her to “eat” and that was pretty awesome.
The kids loved the pancakes but as we sat through breakfast, I kept telling my husband that something was wrong with them. They were flat and they weren’t really cooked inside. My sweet, sweet husband still ate a couple and I didn’t make it through one. I went back through the pancake recipe and realized that I hadn’t put in baking soda! I had no idea how important baking soda was until that morning.
So how important is baking soda? Apparently very!
For me, pancakes are one of the easiest breakfast items to make. I combine it all, use a bunch of skillets on the stove and then
- 3 1/2 cups milk
- 3 tablespoons vinegar
- 3 cups flour
- 3 tablespoons sugar
- 3 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 3 tablespoons flaxseed
- 9 tablespoons water
- 1/3 cup butter melted
- Combine milk and vinegar and set aside. Let sit for 5 minutes.
- Mix together flour, sugar, baking powder, baking soda, salt, flaxseed, water, and melted butter.
- Stir in milk and vinegar mixture. Do not over stir, only stir until all is mixed in.
- Place about 1/2 cup pancake mixture onto oiled, hot skillet. Cook until brown and flip. Pancakes are done when lightly brown on both sides.
- If you have buttermilk, add 3 cups of buttermilk and 1/2 cup of milk.
- Add in your favorite pancake add in like chocolate chips or blueberries before putting the mixture onto the skillet.
