I have been struggling to stay healthy so a while ago we bought a pass to a nearby fitness center for the whole family and I started working out with a lot of online videos. Back 10 years ago I had a pass to a fitness center and it was one of the best choices I had ever made. Over time I had forgotten how much I love the gym and now that I’m back, I’m hooked. I was willing to forgo my extra time yesterday when my husband came home early from work taking a nap and instead hauled my bum over to the fitness center to work out despite using my online videos earlier that day. My body feels great this morning.
Another thing I’ve had to change is my eating habits. I got in some pretty bad eating habits that including eating something like 5 huge meals a day (instead of my normal 5 smaller meals) and eating a lot of sugar and fats around 10 or 11 at night. I’d wake up feeling bloated and uncomfortable and despite all of that, I’d start all over the next day. It was a nasty habit that has been really hard to break. I admit, a couple of nights ago you could have found me in the kitchen eating a small bowl of chips around 9 pm. But I didn’t feel well the next morning, or even after I ate them, and so I probably won’t make that mistake for a while.
Finding healthy replacement foods for what I was eating has been essential. As much as I love salads, I can’t eat them all the time so I’ve been searching for some unique, interesting, but still delicious meals. I saw a picture of a rice bowl which only made me crave extremely salty sauces so instead of making another not-so-healthy meal, I decided to put together some vegetables from my refrigerator on top of some wild rice. My son loves apples in his smoothies, and just as a side to every meal, so I chopped up some apple and threw them on top. My daughter loves Swiss cheese right now so we threw a few slivers on top and although my husband was very hesitant to try it, I ended up catching him sneak some before dinner and he ended up eating 3/4 of all I made.
- 1 tablespoon butter
- 1/2 cup onion
- 2 cups butternut squash cubed
- 2 cups wild rice cooked
- 3 tablespoons milk optional
- 1 cup kale small, bite sized pieces
- 1 cup apples cubed
- 1/4 cup swiss cheese grated
- Melt butter in skillet over medium high heat. Add in onions and cook until translucent.
- Stir in butternut squash and stir until covered in butter. Stir frequently and allow to cook for 10 minutes or until cooked through.
- Add in cooked wild rice and stir and heat until rice is heated through. Add in kale, cook for about 1 minute, and remove from heat.
- If needed, add a little milk to the mix if it seems to be a little dry.
- Add apples and cheese to the top.
