If you want to catch me at home during the day, the best time to find me at home is between 1-3 pm. Except for Mondays because that’s our shopping day. And except for Tuesdays because that’s the afternoon I go out to eat with my husband. And Wednesdays we usually go out with friends for lunch. But other than that, we’re home.
Okay, so we’re basically never consistently home during the week which means that dinner can get lost by the wayside. I’d let it go but the most important part of our day as a family is dinner. It’s where we can sit, eat, and talk together as a family with no other interruptions. Our dining room only has a table and chairs so there’s no television and although there’s windows, we can only see our garden so we are really free from distractions.
To be able to do dinner every evening, however, it means I actually have to cook it. But with my schedule, and lack of being home, I’ve found it’s really hard to get home after 5 pm and then make dinner to finish at a decent time, especially because in the evenings, if we’re not getting ready for bed, we’re headed out again as a family to go to an event or run errands.
Enter: CROCK POTS (or slow cookers)! They have saved my dinners recently and I could not be more happy about it. I made this slow cooker Mongolian Beef recipe when I was really craving beef and it was incredibly delicious.
