This slow cooker pot roast recipe is a simple, basic recipe. We have used 100% grass-fed beef which makes for a very short cooking time.
The last few days have been great here in our house. We had the weekend to ourselves to finish some major projects and we have had some friends visiting from out of town which means that the old college roommates and I get to get together and catch up … not that three of us don’t live within 45 minutes of each other so really we could see each other way more often, but a friend coming in from out of town is always a good excuse to get together.
A while back we had two major water leaks into our basement (if you don’t have a basement, now is a good time to celebrate and remember how lucky you are). It ruined two of our bedrooms downstairs so my husband has been working off and on to fix the damage. Although we like the best of the best, in reality we are actually really cheap so if we can do it ourselves, we will, despite how much we talk about hiring someone to do all of the work for us. So my husband has learned how to put up dry wall and mud and next on the list is carpet installation.
I, on the other hand, have been painting and fixing things upstairs in the bedrooms to make it look a little less 90s and a lot more like us. It has included repainting all of the walls, ceilings, trim, and I even painted my daughter’s bunk bed (that’s a post for a different day). It took me a week to finish that stinking bunk bed and then when we put it back together, we completely ruined the paint job. There are huge scuffs, holes, and we even completely broke off a corner of one of the pieces of the bunk bed. It was awful. Trust me. Luckily my daughter doesn’t care and is just glad to have her room back. I am glad she has her room back as well. She was in a spare bedroom and is the most messy person who lives in our house meaning she had two full rooms to mess up and leave dirty clothes in and cut-up pieces of paper in and it is incredibly nice to have her messing up only one bedroom again. It is also really nice to have a fresh coat of paint on everything. It is finally looking like our house!
With how busy we have been, it was nice to grab a pot roast, throw it into the slow cooker, and then eat it a couple of hours later. This is by far one of the simplest, easiest, most delicious dinners.
