When I think muffins, I tend to maybe think blueberries, but usually it involves a lot of sugar, a lot of chocolate, and a lot of streusel on top. So now you know that we’re not the healthiest family.
However, I’m trying hard to change that and so I decided to try these Strawberry Banana Muffins. They contain whole wheat, flaxseed, and fruit. And I love them because they are so filling and healthier than my white flour, chocolate chip muffins. My children love them too, but can only manage 1/2 to a whole muffin in one sitting before they are full.
Strawberry Banana Muffin Recipe
1/2 cup applesauce
1/4 cup vegetable oil
3/4 cup packed brown sugar
1 teaspoon vanilla extract
2 bananas, mashed
2 cups whole wheat flour
1 tablespoon flaxseed
1 teaspoon baking soda
1 tablespoon ground cinnamon
1 cup chopped strawberries
Strawberry Banana Muffin Instructions
Preheat the oven to 375 degrees F. Grease muffin pan or line with paper liners.
In a large bowl, whisk together eggs, applesauce, oil, brown sugar, vanilla, and bananas.
Combine the flour, flaxseed, baking soda, and cinnamon. Stir into the banana mixture until moistened. Stir in strawberries. Spoon batter into muffin cups, about 3/4 full.
Bake for 20 minutes or until done. Cool before removing from muffin pan.
