Combine flour, sugar, salt, and yeast into Kitchen Aid (or similar) bowl. Stir ingredients together.
At the lowest speed, slowly add in water until it forms a dough. The dough should be slightly tacky to touch but should not stick to your finger.
Let the dough rise in a covered bowl that has been sprayed with a non-stick spray. This should take 1-2 hours.
Once the dough has raised, fill a large part about 3/4 full with water. Bring the water to a boil.
Divide the dough into 12 equal pieces. Create balls out of each piece and push slightly flat. Create a hole in the middle with your finger to resemble a bagel shape.
Drop about 4 dough bagels into the boiling water a time. Allow to boil for 1 minute, flip the bagel over, and boil for 1 more minute.
Remove and place on towels to dry slightly.
(optional) If you are wanting to add cheese to the top, sprinkle Asiago cheese on top of the boiled bagels before putting them into the oven.
Place the 12 dough bagels onto a greased cookie sheet. Bake at 425°F for 20 or until golden brown.
When baked, place on a wire rack to allow cooling.
