Chorizo Breakfast Burrito

  • 1 pound Chorizo pork sausage
  • 2 cups frozen diced potatoes (hashbrowns)
  • 5 eggs
  • 1/8 cup milk
  • 1 cup fresh salsa
  • 1 sliced jalapeƱo pepper
  • 1/2 cup freshly diced onion
  • 1 cup cheese
  • 4 flour tortillas


  1. Cook Chorizo pork sausage in frying pan until cooked thoroughly. Once cooked, set aside.

  2. Use oil from pork sausage to fry the diced potatoes. I like to add in some cheese so it melts and crisps a bit.

  3. Meanwhile, crack the eggs into a bowl. Add in milk. Whisk for scrambled eggs. In a separate frying pan, use a bit of cooking spray and poor the eggs in to cook. Cook on medium low until eggs are done, mixing the eggs every minute or so.

  4. Once sausage, potatoes, and eggs are cooked, assemble them onto a flour tortilla. Add the salsa, pepper, onion, and cheese. Add salt and pepper as needed. Roll into burrito and enjoy!

  5. Optional: wrap each burrito in plastic wrap and place burritos in a freezer bag. Freeze until needed. When you want a frozen burrito, unwrap it, place on microwave-safe plate, and heat until it is cooked through.
